The complexity of the wine matrix makes monitoring winemaking process from grapes to final product crucial for industry. In this context, analytical methodologies that can combine good accuracy, robustness, high sample throughput, “green character”, and by preference real-time analysis, are on-demand create high-quality vitivinicultural products. last years, Fourier-transform Infrared Spectroscopy (FTIR) combined with chemometric analysis has been evaluated in several studies as an effective tool sector. Some applications FTIR spectroscopy have already accepted industry, mainly prediction basic oenological parameters, using portable non-portable instruments, but still many others waiting be thoroughly developed. This literature review aims provide a critical synopsis most important assessing grape quality authenticity, identify possible gaps further research, meeting needs modern industry expectations demanding consumers. were grouped according main sampling material used - 1) leaves, stems, berries; 2) must along summary limitations future perspectives technique.
